Domaine Huet was founded in 1928 and works three sites on that plateau: Le Haut-Lieu, Le Mont and Le Clos du Bourg. Le Haut-Lieu is the original holding and the most clay-rich of the three, which makes it the roundest and most generous of the estate's parcels, quicker to open than Le Mont or Le Clos du Bourg. Moelleux is made only in years when botrytis and ripeness allow, picked in successive passes through the vineyard so that only the affected bunches are taken, fermented slowly with the estate's own yeasts and stopped with substantial residual sugar. Bottled without heavy handling, these are among the longest-lived sweet wines in France.\u003c\/p\u003e\n\u003cp\u003eA half-bottle matures faster than a 750ml, so this is ready now; try it with foie gras, a fruit tart or Roquefort.
