Huet has been the appellation's reference point for the better part of a century and bottles three sites separately. Le Haut-Lieu is a nine-hectare plot of deep brown chalky clay, known locally as aubuis, with the yellow tuffeau bedrock lying as much as four metres down. That richer soil gives the roundest and most supple of the three cuvées, generally the earliest to mature and the first to be ready to drink, though these wines share the longevity of the Clos du Bourg and Le Mont bottlings; the domaine's cellar still holds bottles from the 1940s in good form.\u003c\/p\u003e\n\u003cp\u003eApproachable young and capable of twenty years or more.
