Owned by the Hill-Smith family, who also run Yalumba, the house makes only bottle-fermented sparkling, labelled Méthode Tasmanoise. Chardonnay brings citrus and floral lift while Pinot Noir adds red-fruited depth, and extended time on lees during the second fermentation adds nougat and roasted nut complexity along with a fine, creamy mousse. The finish is dry and fresh, and the wine is ready to drink on release.\u003c\/p\u003e\n\u003cp\u003ePour it well chilled as an aperitif, or with freshly shucked oysters, sushi, prawns and tempura.
