Jean-Baptiste Souillard works with just 0.4 hectares here, on an east-facing hillside at 450 metres where poor, stony grès soils are laced with granite. The vines were planted in the early 1970s and the 2000s. Roussanne is the last variety Souillard picks, sometimes into October, and the fruit arrives with moderate alcohol and firm acidity. After partial crushing the juice ferments with indigenous yeast, and the wine spends 12 months in older oak barrels. A short maceration and gentle pressing give it more grip than most whites from this latitude.\u003c\/p\u003e\n\u003cp\u003eDrink now to six years.
