Souillard's site is east-facing and steep, sitting at 450 to 480 metres on poor, stony grès — sandstone laced with granite — and planted in the early 1970s and again in the 2000s. He works only a small corner of it. The fruit comes from the same late-ripening vineyard as his Roussanne but is picked earlier, at around the same time as his reds, which is central to the restrained, linear style he is after. The wine was raised and aged for twelve to fifteen months in neutral old oak to hold on to fruit purity rather than add weight.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and worth three or four years.
