Puligny sits on a thin band of limestone with the water table close beneath it, which is why its whites are taut, high-toned and more mineral than the broader wines of neighbouring Meursault. Jean-Louis Chavy farms a small holding across the village from a cellar in Puligny, taken on when the Gérard Chavy domaine was divided among the family.
