Watervale, at the southern end of the valley, is prized for Riesling thanks to its elevation, cool nights and red loam over limestone. The wine is made simply, without oak, to keep its lime and floral character intact. The family has supported the McGrath Foundation since 2021, helping to fund a McGrath Breast Care Nurse, and this edition carries the Foundation's name on the label. What is in the bottle is the regular Watervale Riesling, at a modest 11 per cent alcohol.\u003c\/p\u003e\n\u003cp\u003eServe well chilled with oysters, prawn rice paper rolls, salt and pepper squid, Thai salads or fish and chips.
