Atmosphères is instead around 50 to 60 per cent Folle Blanche grown on sandy clay, the balance Pinot Noir on gravel, from vines of 18 to 30 years. Yields are held at 50 to 60 hl\/ha, well under the Champagne average, and the fruit is hand-harvested and estate-grown. Base wines ferment naturally, the second fermentation takes place in bottle, and the wine rests there for a minimum of 24 months before disgorgement. Dosage runs from zero to a maximum of 5 g\/L, and each bottling is drawn from a single year rather than a multi-vintage blend. The label is the work of the illustrator Michel Tolmer.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and holding for three or four years.
