The vines are 35 to 40 years old, grown over the amphibolite rock that gives the wine its name and much of its briny, iodine character. Where the domaine’s other cuvées build texture through long lees ageing, this one spends only a short period on lees, since Landron wants to hold on to as much freshness and minerality as possible; he calls it a free-spirited Muscadet. Only small doses of sulphur are used, enough to block malolactic conversion, and bottling happens early, in March, without filtration. The result is racy and ultra-pure, all salted apple, white flowers and citrus, with penetrating acidity binding a well-honed texture.\u003c\/p\u003e\n\u003cp\u003eDrink over the next three to five years.
