Joh. Jos. Prüm, at Wehlen, has been the standard-bearer for the region's delicate, low-alcohol style since Sebastian Prüm's division of the family holdings in 1911, and the estate is now run by Katharina Prüm. Goldkapsel, the gold capsule, is not a legal category but an estate designation: as Katharina Prüm describes them, limited lots made from the strongest selected grapes of the best Auslese of a vintage, with more concentrated juice and usually a measure of botrytis. Making them took several passes through the vineyard and severe selection at the picking table, and roughly a third of the fruit came in botrytis-affected. Fermentation is spontaneous in the estate's traditional cellar and the wines are bottled with a good deal of natural residual sugar held in balance by high acidity. Badstube, covering the best slopes immediately above Bernkastel, tends to give the estate's most approachable wines, and 375ml is a practical measure for a wine of this weight.\u003c\/p\u003e\n\u003cp\u003eReady to enjoy now and good for decades.
