Joh. Jos. Prüm, at Wehlen on the middle Mosel and led by Katharina Prüm, picked its Kabinett fruit between mid- and late October in this vintage. The house method does not change: hand harvesting in tries, slow spontaneous fermentation, long lees ageing in traditional Fuder and release with the light reductive spritz that has always marked these wines in youth. Kabinett here is the estate at its most transparent — low in alcohol, crystalline in fruit, with acidity that makes the modest residual sugar read as almost dry.
