The Joh. Jos. Prüm holding there is a small part of a range built mainly on Wehlener Sonnenuhr, Graacher Himmelreich and Zeltinger Sonnenuhr. Winemaking does not change from site to site: gentle pressing, slow and cool fermentation, natural residual sugar left in the wine, low finished alcohol and bottling only when the wine is ready. At Spätlese level the wines are still light in body while flavour intensity and depth of character increase markedly over the Kabinett — more flesh, more power and enough weight for richer dishes, without overt sweetness.
