Joh. Jos. Prüm has been based at Wehlen since 1911 and is now run by Katharina Prüm, working to a house style that has changed very little. Fruit is picked in successive passes so that each parcel comes in at the intended ripeness, whole bunches are pressed gently, and fermentation runs with ambient yeasts in stainless steel before stopping of its own accord, leaving the grape's own residual sugar. At Auslese level the step up from Spätlese is one of power and flesh rather than sugar alone, bringing more concentration and length while the piercing acidity and modest alcohol of the Mosel keep the wine light on its feet.
