The slate here is grey-blue, weathered and free-draining, and the near-vertical southerly exposure allows Riesling to ripen while retaining the acidity that defines the region. At Auslese level the fruit is selected in successive picking passes, and the wine ferments slowly with wild yeasts in stainless steel before being bottled with a good measure of natural residual sugar. Dr Manfred Prüm and his daughter Katharina hold the wines back for a long period after bottling; young Prüm is often closed and slightly spritzy, and the estate has never made any secret of preferring that customers wait.
