Jos. Prüm has been its defining producer for a century. Katharina Prüm runs the estate in the established house style: long, cool, unhurried fermentation, plenty of natural residual sugar, low alcohol and bottling without haste. Goldkapsel sits above the ordinary Auslese without being a separate legal class. Only a small quantity is made, from repeated passes through the vineyard and draconian selection, using stronger grapes with more concentrated juice and usually a measure of botrytis. The result is another considerable step up in power and weight.
