Joh. Jos. Prüm has been based at Wehlen since 1911 and is now run by Katharina Prüm, working to a house style that has changed very little. Fruit is picked in successive passes so that each parcel comes in at the intended ripeness, whole bunches are pressed gently, and fermentation runs with ambient yeasts in stainless steel before stopping of its own accord, leaving the grape's own residual sugar. Kabinett is the lightest of the Prädikat levels, picked at modest must weights and finishing at around eight per cent alcohol with a delicate thread of residual sugar; the power builds steadily across the estate's sites from Bernkastel through Graach to Wehlen.\u003c\/p\u003e\n\u003cp\u003eMostly drunk young but good for five to ten years and more; serve at 8-10°C as an aperitif or with sashimi, tuna tartare, or lighter Asian dishes.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
