Joh. Jos. Prüm at Wehlen, now led by Katharina Prüm, treats Spätlese as its most versatile category: light in body but intense in flavour, with more flesh and power than the Kabinett wines without necessarily more overt sweetness. Picking is by hand in tries, fermentation is slow and spontaneous, and the wines rest long on their lees in traditional Fuder before release, arriving with the faint spritz that is a house signature and a marker of their capacity to age.
