Joh. Jos. Prüm has been the site's defining producer for more than a century. Spätlese at the estate remains light in body, but intensity and depth of character rise markedly over the Kabinett: more flesh, more power and enough substance to stand up to richer food, all without obvious sweetness. Katharina Prüm considers Spätlese one of the estate's great food-wine categories. Fermentation is slow and cool, the wines are bottled with natural residual sugar and low alcohol, and a magnum's smaller ratio of air to wine slows the whole process down further still.\u003c\/p\u003e\n\u003cp\u003eFine now, better in five or ten years and sound for decades beyond that.
