Spätlese is picked later than Kabinett and carries more must weight; at Prüm this shows less as extra sweetness than as extra flesh and power, the residual sugar balanced by the racy acidity and slate character that only the Mosel gives. The wines are fermented with ambient yeasts, bottled early, and are famously reserved in youth, needing time to open.
