Jos. Prüm has held vines there alongside Wehlen and Graach for generations. At Auslese level the step up is one of power rather than simply sweetness: the fruit is riper and more intense, but the style stays pure and ultra-fine, adding flesh, complexity and length to what the Spätlese already offers. Differences between the vineyards become more obvious at this level, not less. Fermentation is slow and cool, the sugar is natural, and alcohol stays low enough that the wine remains digestible through a meal rather than confined to the end of one.\u003c\/p\u003e\n\u003cp\u003eApproachable young for an Auslese, and very long-lived.
