Joh. Jos. Prüm has been based at Wehlen since 1911 and is now run by Katharina Prüm, working to a house style that has changed very little. Fruit is picked in successive passes so that each parcel comes in at the intended ripeness, whole bunches are pressed gently, and fermentation runs with ambient yeasts in stainless steel before stopping of its own accord, leaving the grape's own residual sugar.
