Pabiot farms biodynamically and hand-harvests this one-hectare block of Les Champs de Cris, sited high above the river on a plateau. Aubaine translates roughly as something to be appreciated, and it is the easier going of the estate's two single vineyards. The winemaking is identical across both, so the difference is purely the soil: the grapes are pressed, fermented with natural yeasts and raised in concrete for eighteen months.
