The fruit comes from a selection of lieux-dits covering the full range of Pouilly's soil types, including limestone, silica and flint. The grapes were mostly whole-bunch pressed with a proportion crushed for structure, and the wine was aged in stainless steel tanks on its lees for eight to twelve months, which adds texture without blurring the variety's clarity.\u003c\/p\u003e\n\u003cp\u003eDrink over the next three or four years with goat's cheese, oysters or grilled asparagus.
