Florilège is Jonathan Didier Pabiot's calling card, assembled from mature vines across all three, in the lieux-dits Les Champs de Cris, Les Asserts, Villiers and Les Champs Piot. The vineyards are farmed biodynamically and densely planted at 10,000 vines per hectare, with yields held to 30 hectolitres per hectare. Ninety per cent of the crop was fermented and raised in concrete cuve and stainless steel, with the remaining ten per cent fermented in barrel and blended back for complexity. The wine spent at least twelve months on lees, which builds texture without blunting the citrus clarity or the fine phenolic grip.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and will develop over five years.
