Léon, which was previously labelled Florilège, is the wine Jonathan Didier Pabiot regards as his calling card, drawing on all three soils through the lieux-dits Les Champs de Cris, Les Asserts, Villiers and Les Champs Piot, all densely planted at 10,000 vines per hectare. Yields are held to 30 hl\/ha. The winemaking is deliberately intricate: eighty per cent of the crop is fermented and raised in concrete cuve and stainless steel, with twenty per cent barrel-fermented juice blended in, and the wine rests twelve to eighteen months on lees to build texture. Alcohol sits at a moderate 13 per cent.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and worth five years in the cellar.
