It is cropped from the domaine's younger vines, though yields are kept low and the farming, which is biodynamic, is no less exacting than for the single-vineyard bottlings. The fruit comes from a selection of lieux-dits covering the full spread of Pouilly's soils, limestone, silica and flint among them, which is part of why it holds together as a Pouilly-Fumé rather than reading simply as a varietal Sauvignon. The grapes were mostly whole-bunch pressed, with a proportion crushed for structure, and the wine was aged on its lees in stainless steel for six to eight months, with no oak involved.
