The winemaking is unusual for Australian Riesling: the fruit is cold soaked on skins before fermentation, fermented with wild yeast and left on lees for an extended period, all of which builds texture. Now gold-tinged, the 2015 shows floral aromatics, honeysuckle and green-skinned pear, with citrus on the palate and, as it opens, delicate nuttiness, baked pear and candied peel.\u003c\/p\u003e\n\u003cp\u003eTake it out of the fridge a few minutes before serving, around 10 degrees, so its aged character can show.
