This bottling comes from the estate's vineyards below the grand crus and shows the family's approach clearly: whole cluster pressing, cool fermentation in stainless steel, no malolactic fermentation and no sugar left for effect. Pinot Gris is naturally high in sugar and low in acid, so fermenting it out completely takes healthy fruit and patience.
