Those mineral rich soils hold water better than the thin limestone terraces nearby, which gives wines real breadth beneath their acidity. Kientzler work their parcels by hand from the family cellar at Ribeauville, harvesting late for full physiological ripeness while keeping fermentation slow and cool. Bunches are pressed whole, fermentation runs on indigenous yeast in stainless steel and the wine rests on fine lees before bottling without oak.
