This is not a classic bourbon put into a peated cask; it is a whiskey that conforms to the requirements for bourbon and is built with peated malt in the mash from the start. The malt was grown and kilned in Scotland and represents a quarter of the grain bill, with 75 per cent organic New York State corn making up the rest. Two traditions in one bottle.\u003c\/p\u003e\n\u003cp\u003eCorn sweetness and vanilla first, then earthy smoke building through the finish. Drink it neat, or with a drop of water.
