Eighty per cent organic corn from the Finger Lakes is joined by English Golden Promise barley, with no wheat and no rye at all, which is closer to a Scotch mash bill than an American one. That thinking carries through to the still house: double pot distillation, giving a purer and more flavourful white spirit, and then four to six years in a range of new charred oak barrels. The organic grain and the artisan method together are what make it taste the way it does.\u003c\/p\u003e\n\u003cp\u003eSweet caramel and fresh vanilla with a dark berry spice underneath, and real complexity for the age. Neat or over one large cube.
