Welschriesling is the classic local partner for the style, holding a sharp acid line beneath the sugar, while Chardonnay contributes weight and a broader texture. The grapes are picked in repeated passes and pressed slowly, and the wine is raised in neutral vessels so the fruit and botrytis character stay unmasked.
