The Zwischen den Seen wines, named for the land between the lakes, are raised in large neutral Austrian oak casks so that the grape and the botrytis speak without new wood, while the Nouvelle Vague bottlings go into new French barriques. Scheurebe, a Silvaner crossing widely planted in Germany and Austria, is prized here for the grapefruit and blackcurrant-leaf aromatics it keeps even under heavy noble rot.
