Zwischen den Seen bottlings are matured in large neutral Austrian casks rather than new barriques, a choice that leaves the grape and the noble rot unobscured. Scheurebe holds its grapefruit and blackcurrant-leaf character through botrytis better than most varieties, which is why it appears so often at the sweeter end of the range.
