Aux Gauthiers sits at the top of the slope above the commune of Villié-Morgon, at 520 metres, which makes it one of the highest sites in the region and one of the last to ripen; the fruit is picked a full week after Moreau's Chassagne-Montrachet parcels. The vines were planted in the 1940s and 1970s, so there is real age here. Winemaking follows the domaine's Burgundian instincts rather than the classic Beaujolais semi-carbonic route, with 30% whole clusters in the ferment and no oak at all during maturation, so the granite and the altitude speak plainly. The result is a Beaujolais-Villages with lift and cut rather than obvious flesh.\u003c\/p\u003e\n\u003cp\u003eDrink over the next three to five years, lightly chilled, with charcuterie, roast pork or a mushroom tart.
