The vines behind this cuvee are around 65 years old; at that age they crop very little and give small, concentrated berries with fine tannins. Half the bunches go into the ferment whole, and retaining the stems adds aromatic lift and a savoury, peppery edge while keeping the wine fresh and firmly framed rather than heavy. Syrah is the only red grape of the appellation.
