La Soufrandière has been in the Bret family for generations, though Jean-Philippe and Jean-Guillaume Bret were the first to bottle the fruit themselves rather than send it to the co-operative. Grapes are hand picked and whole-bunch pressed, fermentation runs on indigenous yeasts, and ageing takes place on lees in a mix of barrel and larger wood.\u003c\/p\u003e\n\u003cp\u003eGood over the next five to seven years, with roast chicken, richer fish or comté.
