La Combe Desroches is a 1.5-hectare parcel that La Soufrandière purchased in 2016. It was already managed biodynamically, and the Bret brothers have kept it that way while adding precision. The vineyard lies at the foot of the Roche de Vergisson on the north-facing side of the valley, on soils of eroded limestone and clay. Jean-Philippe Bret notes that the grapes reach good ripeness despite the cooler exposure, and that the site's water-holding capacity means it performs especially well in warm, dry seasons. Two-thirds of the blend is raised in tank rather than barrel, which is a deliberate choice to lock in tension and keep the wine straight-lined.\u003c\/p\u003e\n\u003cp\u003eDrink over the next five or six years, with oysters, grilled fish or a goat's cheese salad.
