Luke Lambert draws on two parcels here. The first sits on a windy, east-facing slope where poor volcanic soils, threaded with yellow clay and eroded granite, hold yields down and concentrate flavour. The second lies on a sunnier north-west slope with double the vine density and more red volcanic soil, and it adds muscle and layers to the spine the eastern block provides. Winemaking follows the house pattern: whole-bunch pressing, wild yeast, an old 4,000-litre foudre, no temperature control, minimal sulphur, occasional lees stirring across six to eight months, and no fining or filtration.\u003c\/p\u003e\n\u003cp\u003eGenerous pithy stone fruit, steely minerality, a swish of salinity and a touch of struck match, all over an undercurrent of skinsy tension and finely rendered acidity. Structure leads, not fruit.
