Storage is a 4,000-litre French oak foudre, which gives breadth without any oak flavour, and bottling happens unfiltered with minimal sulphur. A long, slow growing season in 2021 lent extra perfume and subtlety. Luke and Rosalind Lambert treat this as a serious wine, not a by-product, and the granite site shows through.\u003c\/p\u003e\n\u003cp\u003eTalc, river stone and wild strawberry, dry and quite savoury, with a chalky pull at the end. Serve well chilled, 8 to 10 degrees.
