Sixty per cent whole bunches went into a wild ferment, and maturation happened in a 5,000-litre old cask before bottling without fining or filtration. Luke Lambert has spent a long time learning what a bunch can give and when to stop asking, and this is that judgement in practice. The granite under the Denton slope supplies the mineral thread and the fine, dusty tannin.\u003c\/p\u003e\n\u003cp\u003eAromatic and lively, with juicy blue fruit and pepper spice, a distinct mineral lift and real finesse through the middle. Long, earthy close. Serve at 15 to 16 degrees.
