Granitic sand over bedrock is unusual ground for the variety in Australia, and with organic farming and a cool site it is the source of the perfume and the fine tannin. The 2022 fermented wild without temperature control and spent eighteen days on skins with plunging and foot stomping, then eighteen months in Slavonian and French foudres. Bottled unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eRose petal and red cherry, brown spice and tar, with tannin that grips lightly and a long, savoury finish. It builds with air. Serve at 16 degrees, decanted.
