The Moppa Hill site went in during 1962, ancient sandy topsoil with old vines anchored deep in reddish-orange clay; Greenock runs to deep red earth. Both are own-rooted, both cropped around half a tonne to the acre that year, and both are farmed on organic principles. The blend came in at 57 per cent Grenache, 32 Shiraz and 11 dry-grown Moppa Mourvèdre, each handpicked, destemmed and fermented as whole berries, with free-run and press components aged apart for sixteen months in seasoned French puncheons.\u003c\/p\u003e\n\u003cp\u003eScented with dark fruit, sweet spice and a floral lift, then full-throated but balanced, plummy and generous with fine tannin underneath. Serve at 16 to 17 degrees.
