The two sources are the estate's own: Moppa Hill, planted in 1962, where ancient sandy topsoil sits over the reddish-orange clay the old roots reach down into, and Greenock, on deep red earth. Both are own-rooted and low-yielding, and both are farmed on organic principles. Hand-picked fruit is destemmed and fermented as whole berries in small open-top vessels, then matured for eighteen months in seasoned French oak puncheons.\u003c\/p\u003e\n\u003cp\u003eExpect raspberry and red plum, a dusting of pepper and a dry, savoury finish. Medium-bodied with fine, powdery tannin. Serve at 16 degrees, or a little cooler in summer.
