Grapes were hand-picked and pressed as whole bunches into stainless steel and a single barrel for fermentation, then kept on post-ferment lees a further six months, which is where the texture and the freshness come from. 2017 was a cool growing season, and it shows in the line of acid running through the middle.\u003c\/p\u003e\n\u003cp\u003ePink grapefruit, candle wax and fresh-cut hay, textural but lively, closing salty and moreish. Serve at 10 to 12 degrees.
