It again pairs Chardonnay with Altesse, the Savoie variety known locally as Roussette, but draws on different plots and a different élevage from the Mérune. La Guele is a small site at 350 metres carrying forty-five-year-old Chardonnay and Altesse on deep limestone. The original Les Cortis plot, on siltier and stonier soils at just over 300 metres, holds Chardonnay vines approaching sixty-five years. Where Mérune stays in fibreglass, Naxide matures in barrel and demi-muids on fine lees, and the slow micro-oxygenation that wood allows gives the wine more dimension. Jérémy Decoster regards it as his serious white. It is bottled unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eWorth keeping three to five years, it suits roast chicken, veal or a mature Beaufort.
