The cuvée draws on several east-facing parcels totalling about 4.5 hectares, planted between 1982 and 1987 and climbing to around 350 metres. Up here the clay topsoil is shallow and full of small stones from the hard limestone beneath, which brings tension and a salty freshness to the fruit. Farming is certified organic, with biodynamic practices. Fermentation relies on indigenous yeasts, two thirds in big oval oak vats and the rest in demi-muids, followed by seven to eight months on fine lees.\u003c\/p\u003e\n\u003cp\u003eWell chilled, it makes a smart aperitif, and it has enough texture for the table too. Think oysters, grilled fish, goat's cheese salad or chicken schnitzel with lemon.
