Valentin Desloges works the Bel Air terroir, a south-facing site where some of the vines reach sixty years of age. Age and low yields account for part of the wine's intensity, but so do the soils: red clay dominates, lying just beneath a layer of flinty sand, and the combination gives spicy generosity and breadth of texture. The winemaking follows the estate's Chapitre I cuvée, except that this wine is fermented in barrel and matured for eighteen months rather than twelve, in ex-Coche-Dury barrels with 20% new oak from the domaine's own coopering.\u003c\/p\u003e\n\u003cp\u003eDrink over the next four to six years with grilled fish, roast chicken or goat's cheese; serve at 10–12°C.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
