Picking is by hand, fermentation is spontaneous in open-top vessels, and maturation runs in barrels of which half are new. That last figure would flatten most Pinot; it does not here, because Ray Nadeson has his barrels built to order by one French cooper, light toast and tight grain, specified to encourage micro-oxygenation and soften tannin. A scientist by training, he treats oak as a structural tool.\u003c\/p\u003e\n\u003cp\u003eDeep red fruit and exotic spice with savoury edges, rich in texture but still lifted. Serve at 15 degrees.
