At that concentration fermentation was never a given. Once the must was in barrel, wild yeast took it on anyway, working gently across eight months. The finished wine sits at 150 grams per litre of residual sugar and 11.5 per cent alcohol, and comes in a half bottle.\u003c\/p\u003e\n\u003cp\u003eThick and sweet without being cloying, with dried apricot, honey and orange peel held up by acid. A small glass goes a long way. Serve at 8 degrees.
